DEAR FULVIO, WHERE DO YOU HAIL FROM?
Hi, my name is Fulvio Porcu, I am from Italy but I was born in Belgium from a mum who was a teacher and a dad who was a trader. I grew up in Liège where I studied IT. Born from catholic parents, I was expected to go to church until the age of 8, at which time I was allowed to choose to go or not. As an alone and independent child, I have always hated institutions, groups, clubs and schools and this has not changed!

THAT’S INTERESTING, HOW WAS YOUR CHILDHOOD?
I am very grateful to my mum for passing over her love of French and French Literature to me. I owe my taste for good food and wine to my dad. When I was a child, he would take me around to gastronomic restaurants in order for me to explore flavours from different countries. As soon as I started earning, I would spend all my money on restaurants which I would visit every day!

WHICH MILESTONES CAN YOUSHARE WITH US?
It’s during one of my many trips to Italy, more precisely to Venice, that I met my wife. We now have a four year old daughter. We got married in a small church built in the 13th century on an island called Mazzorbo in Venice.

WHAT EVENT OR PERSON HAS HAD THE MOST INFLUENCE ON YOU?
I have always loved travelling and I was lucky to travel to sunny destinations which have always been my favourite. Since I was a child, I have always hated the cold and I promised myself to move as soon as the opportunity would arise.

HOW DID YOU END UP IN MAURITIUS?
I came to Mauritius for the first time in 2002 and i was immediately seduced by the Mauritians and their hospitality. I was yearning to come back as soon as possible. I then started working on a project which would enable me to stay in the country. I changed my career and abandoned IT, a career which was no longer challenging. I then chose to do something which I always wanted to – make ice cream! While I was filling in the formalities I realised that Mauritius was missing cool bars and I decided to open a garden bar. This is how Coté jasmin was born! The garden bar is found in a cool place in Port Louis some 20 meters away from the church “Immaculée Conception” and right in front of “Le Mauricien”. It is a bar in which you are more than welcome to just have a drink or a snack. We have four set menus daily and desserts. As I am Italian, we always make fresh pasta or Mediterranean meals (tuna tartare, Nicoise salad, tabbouleh, couscous…). Our main concern is the quality of our products and we only use fresh ingredients, olive oil and real parmesan cheese. Our ice creams have been conceived with exotic Mauritian fruits, with no colourings and artificial flavourings. We offer beer on tap, cocktails and freshly squeezed juices. Of course we also serve English tea, espressos and Italian Cappuccinos.


WHAT IS YOUR AVERAGE DAY LIKE?
Every morning, I purchase fresh ingredients in order to prepare ourselves for the meals of the day. The kitchen is open from morning till 15:00 and from 18:00 till night time. We are closed on Sundays. In the afternoon, the bar works well and people often come for a drink after work. We also have a happy hour on Fridays from 17:00 till 19:00. This is followed by a jam till 22:00.

WHAT DO YOU LIKE MOST ABOUT LIVING IN MAURITIUS?
The climate and the sympathetic Mauritians.
