PATRICE DUMONT THE MAKINGS OF A CHEF

DEAR PATRICE, WHERE DO YOU HAIL FROM?
I was born in Metz, which is in the north east of France. I have 2 brothers and 1 sister. My main education was at the culinary school where I spent 4 years before moving to a 2 star Michelin restaurant where I worked as head chef when I was 20 years old. Afterwards, I travelled a little and worked in 5 stars hotels and restaurants in Singapore, Kuala Lumpur, Mauritius & Bangkok. I have 3 kids, 2 daughters and 1 boy aged 13, 12 and 8.


WOULD YOU LIKE TO SHARE SOME OF THE BEST CHILDHOOD MEMORIES WITH US?
The strongest memories I have are about cooking. My mother was an excellent home cook. We used to spend lots of our time with my older brother who is a chef as well. All this made me want to become a chef. I enrolled in a French culinary school at the same time as my brother and I wanted to enter the catering business. One day we had to make a dinner for 200 people between the two of us. Outside work was forbidden by the college  but we still did it and at the end of the evening, the director of the school  who was attending that dinner, came up to us to congratulate us….. We were extremely scared because we were not supposed to do it… At the end, the guy who was supposed to  pay us gave us only 50% of the  sum agreed. This was my début in business!


HOW ABOUT IMPORTANT MILESTONES IN YOUR LIFE?
I am separated since 4 years now and my kids are living in France. I now have a beautiful fiancee called Nathalie and she helps me a lot. She is a good listener and she calms me down as I am a little excessive in everything I do. My kids were all born outside France the two girls in Mauritius and the boy in Bangkok. My boy was named baby of the year as he was born weighing 5kg and measuring 56 cm!


HAS ANYBODY IN PARTICULAR INSPIRED YOU DURING YOUR JOURNEY?
The boss I worked with in Paris at the 2 stars Michelin restaurant… This is where I developed true love for the cuisine, the importance of the recognition of the customers, and the importance of delegating work to people and most importantly Trust.
SO WHAT DO YOU DO IN MAURITIUS?


I own l’Atelier Dumont at 1 cyber city Ebene, and in November I am going to open a take away unit and a middle range restaurant at Ebene junction. I am also catering and for the past 2 years I am the president of the jury of Super Chef Mauritius with Sandy Scioly from Long Beach. I am also from time to time a consultant for hotel chains. I just finished 1 year at Attitude Resorts.


WHAT ARE THE THINGS YOU ARE PASSIONATE ABOUT?
I love painting. I go through phases during which I am very active at it. I will start two painting concepts very soon one will be painting with spices and the other one creating individual and personalised partitions to be placed in personal kitchens at home… I love sports, golf, tennis, fitness,  cycling and walking for hours…..
